Instructions

  • Preheat oven to 350 degrees and line a muffin tray with liners (or grease).
  • In a medium mixing bowl, combine the flour, baking powder, soda, and salt.
  • In a separate bowl, combine the bananas, sugars, egg, oil, and vanilla.
  • Whisk banana mixture into the flour mixture and stir until just combined.
  • Pour batter evenly into prepared muffin cups, filling about 2/3 full.
  • In a small bowl, mix the cream cheese, sugar, egg yolk, and vanilla together until smooth.
  • Scoop about a spoonful of cream cheese mixture onto each filled muffin cup and continue until all muffin cups have cream cheese.
  • Place pan into preheated oven and bake for about 18-20 minutes.
  • Remove from oven and enjoy!
