Ingredients

potatoes, peeled and cubed
Russet or Yukon

sour cream

cup
milk

butter
salt/pepper to taste

cheddar cheese, shredded, divided

lb
bacon, cooked/crumbled

green onions, chopped
Instructions
Boil potatoes in a large pot/dutch oven for about 15-20 minutes, or until fork tender.
Drain water and place potatoes in a large bowl.
Add the sour cream, milk, butter, salt, and pepper.
Beat on medium speed with an electric hand mixer or potato masher until fluffy.
Stir in 2 cups of shredded cheese, crumbled bacon, and chopped green onion.
Transfer mixture to a greased 3 quart baking dish.
Sprinkle remaining one cup of cheese on top.
Place in a preheated oven, 350 degrees, and bake for 30 minutes.
