Deep Fried Uncrustables

Uncrustables
*any flavor

cups
pancake mix
2
eggs

cups
milk
1 ½
tablespoon
oil

oil
*for frying
toppings of choice: powdered sugar, cherries, strawberries, chocolate, etc.
Instructions
Start by adding your pancake mix, eggs, milk, and 1 ½ tablespoons of oil to a large mixing bowl.
Whisk together until well combined. Small lumps of flour are fine. Don’t over whisk.
Place your remaining oil in a skillet and heat up. Drop in a few drops of water, if it boils, it’s ready.
Place a skewer through the middle of your uncrustable or use a fork to dip it in the batter. Make sure both sides are coated.
Gently place in heated oil. Fry for about two minutes on each side. Until golden, and cooked through.
Place on a paper towel to soak up any additional oil.
Place on a serving plate and dust with powdered sugar.
You can add any additional toppings you prefer, such as strawberries, cherries, or chocolate.
