Instructions
Prepare the rolls: Spray an 8x8-inch baking pan with cooking spray. Cut each thawed dinner roll in half horizontally and place cut-side down in the prepared baking dish. Cover with plastic wrap and let rise for 30 minutes.
Add butter and apples: Remove the plastic wrap and brush the rolls evenly with melted butter. Sprinkle the chopped apples over the rolls.
Make the cream cheese mixture: In a small bowl, combine the cream cheese, egg, 2 tablespoons granulated sugar, and lemon juice until smooth. Spread evenly over the apples and rolls.
Add the cinnamon sugar: In a small bowl, combine the brown sugar, ground cinnamon, remaining granulated sugar, and nutmeg. Sprinkle evenly over the top.
Rise and bake: Cover the pan with plastic wrap and let rise until doubled in size. Remove the plastic wrap and bake in a preheated 350°F oven for 30-35 minutes, or until the rolls are golden brown and baked through.
Make the glaze: In a small bowl, whisk together the powdered sugar and milk until smooth. Drizzle over the warm bake.
Serve: Scoop into bowls and serve warm. Top with vanilla ice cream for dessert, if desired.
Notes
Place a baking sheet underneath the baking pan to catch any filling that may bubble over while baking.
Thaw the Rhodes rolls only until they're easy to cut but still chilled.
Don't skip the second rise. Allow the rolls to double in size before baking for the best soft, fluffy texture.
For a thinner glaze that melts into the rolls, drizzle it on while the bake is warm. For a thicker glaze, let the bake cool first.
