- 1 lb Red/Yellow Potatoes *diced
- 3 tablespoon olive oil
- 1 packet Zesty Italian dressing mix *dry
- Salt/Pepper *to taste
Dice/halve red potatoes leaving skin on. Cut desired amount and spread out on baking sheet.
Drizzle olive oil on top of potatoes and use fingers to sift through, until thoroughly coated.
Sprinkle packet of Italian dressing mix on top of potatoes evenly.
Sprinkle desired amount of salt and pepper on top.
Bake in oven at 400 degrees for about 45 minutes, or until tender. Serve!
