Ingredients

  • 1 tablespoon olive oil
  • 1 onion *diced
  • 1 red pepper *diced
  • 20 oz Rotel
  • 3 cups chicken broth
  • 2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 tablespoon chili powder
  • 2 cups corn
  • 14 oz black beans *drained/rinsed
  • 8 oz cream cheese
  • 1 lb chicken *cooked/shredded
  • salt/pepper/toppings of choice

Instructions

  • Add olive oil and onion to a pot. Allow to cook for about 3 minutes over medium heat, or until tender.
  • Add in red pepper, Rotel, chicken broth, seasonings, corn, and beans.
  • Allow to cook for about 5 minutes.
  • Add in the cream cheese and stir until fully melted.
  • Add in the chicken and desired amount of salt/pepper.
  • Bring soup to a boil before reducing heat to low and simmering for 10 minutes.
  • Serve in a bowl with desired toppings.
