- 1 tablespoon olive oil
- 1 onion *diced
- 1 red pepper *diced
- 20 oz Rotel
- 3 cups chicken broth
- 2 teaspoon garlic powder
- 1/2 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 tablespoon chili powder
- 2 cups corn
- 14 oz black beans *drained/rinsed
- 8 oz cream cheese
- 1 lb chicken *cooked/shredded
- salt/pepper/toppings of choice
Add olive oil and onion to a pot. Allow to cook for about 3 minutes over medium heat, or until tender.
Add in red pepper, Rotel, chicken broth, seasonings, corn, and beans.
Allow to cook for about 5 minutes.
Add in the cream cheese and stir until fully melted.
Add in the chicken and desired amount of salt/pepper.
Bring soup to a boil before reducing heat to low and simmering for 10 minutes.
Serve in a bowl with desired toppings.
