Muffins
- 1 1/2 cups quick oats
- 1 1/4 cup whole wheat pastry flour *all purpose works too
- 1/2 cup brown sugar
- 1 teaspoon baking powder
- 3/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1 cup applesauce *unsweetened
- 1/2 cup milk
- 3 tablespoon oil
- 1 egg white
Topping
- 1 tablespoon butter *melted
- 1/4 cup quick oats
- 1 tablespoon brown sugar
- 1/2 teaspoon cinnamon
Muffins
In a bowl, combine the quick oats, flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
In a separate bowl, combine the applesauce, milk, oil, vanilla, and egg white.
Slowly mix the wet ingredients into the dry ingredients, stirring until just mixed.
Pour batter into greased or lined muffin tins. Set aside.
Topping
In a small bowl, combine the butter, quick oats, brown sugar, and cinnamon.
Sprinkle the topping over the muffin cups.
Place muffin tray in a preheated oven, 400, and bake for about 18 minutes, or until toothpick comes out clean once inserted in center of muffin. Enjoy!
