1. Line a cookie sheet with parchment paper and set aside. 2. In a food processor, pulse all the cookies. 3. Use an electric mixer to combine the cream cheese and crushed cookies. 4. Form the cookie mixture into small 1-inch balls and place on the cookie sheet. 5. Place pan into the freezer. 6. Melt the chocolate and remove frozen balls from freezer. 7. Dip each ball into the chocolate until coated evenly. 8 Add sprinkles if desired. 9. Continue process until all are coated.
