This recipe is one that my mother in law passed to me. I had never made a pot pie before this and didnt know how easy it would be! This is one of those meals you can prepare ahead of time and stick in the fridge if you want. Definitely a hit with the family, and super quick/easy to make!!
1/2 cup chopped onion
6 tbsp butter or margarine
1/2 cup flour
3 cups chicken broth
2-3 chicken breasts, cooked, chopped or diced
1 can mixed veggies (I used two small cans, one carrots/ one peas)
All ready pie crust
Salt/Pepper (to taste)
Cook onion in butter in large skillet until tender. Blend in 1/2 cup flour, add chicken broth all at once using a whisk to blend into onion/flour mixture. Cook and stir until thick and bubbly. Add in the cooked chicken and veggies. Season to taste with salt/pepper. Set aside. *I also seasoned my chicken while cooking it, I used garlic powder, its optional though.
Place one pie crust on bottom of pie dish, press crust into dish so it takes form. Pour in chicken mixture. Put the other pie crust on top and seal using a fork.
Bake at 425 for 20-25 minutes or until golden brown.
*You may also use instant mashed potatoes on bottom of pie dish in lieu of pie crust.
