Lemon Zucchini Muffins

A moist, flavorful muffin packed with zucchini and just the right amount of lemon!

  • 1 3/4 cup flour
  • 1/2 cup sugar
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 2 cups shredded zucchini
  • 1/2 cup oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • 2 tsp lemon zest
  • 2 tbsp sugar
  • 1 tbsp lemon juice


  • Preheat oven to 350 degrees and line muffin tray with liners.
  • Combine the flour, sugar, salt, baking soda, baking powder, and cinnamon in a medium bowl.
  • Add in the zucchini, oil, eggs, vanilla, lemon juice, and zest.
  • Stir until just combined.
  • Scoop batter into lined muffin cups, about 3/4 full.
  • Place muffin tray in preheated oven and bake for about 20 minutes.
  • While muffins are baking, combine the sugar and lemon juice in small bowl. Microwave mixture for about 25 seconds.
  • Once muffins are done, remove from oven and allow to cool.
  • Drizzle glaze over tops of muffins and serve! Enjoy!
