- 30 oz black eyed peas *rinsed/drained
- 15 oz black beans *rinsed/drained
- 2 cups corn
- 1 red onion *chopped
- 1 green pepper *chopped
- 1 red pepper *chopped
- 1 jalapeno *de-seeded, diced
- 6 garlic cloves *minced
- 1/4 cup cilantro *chopped
- 3 tablespoon olive oil
- 2 tablespoon red wine vinegar
- 2 teaspoon salt
- 1 lime *juiced
Combine all ingredients in one medium bowl. Mix well.
Place bowl into refrigerator for a minimum of 2 hours, best overnight.
Stir well prior to serving!
