Ingredients

  • 30 oz black eyed peas *rinsed/drained
  • 15 oz black beans *rinsed/drained
  • 2 cups corn
  • 1 red onion *chopped
  • 1 green pepper *chopped
  • 1 red pepper *chopped
  • 1 jalapeno *de-seeded, diced
  • 6 garlic cloves *minced
  • 1/4 cup cilantro *chopped
  • 3 tablespoon olive oil
  • 2 tablespoon red wine vinegar
  • 2 teaspoon salt
  • 1 lime *juiced

Instructions

  • Combine all ingredients in one medium bowl. Mix well.
  • Place bowl into refrigerator for a minimum of 2 hours, best overnight.
  • Stir well prior to serving!
