Easy Blackberry Muffins

Ingredients

  • 1/2 cup butter *softened
  • 1 cup sugar
  • 2 eggs
  • 2 cups flour *all purpose
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 2 cups blackberries

Instructions

  • Preheat oven to 375 degrees and line a muffin tray with paper or silicone liners.
  • In a large bowl, cream together the butter and sugar.
  • Add in the eggs, one at a time.
  • In a small bowl, combine the flour, baking powder, and salt.
  • Slowly add the milk and flour mixture into the creamed butter mixture.
  • Stir until just combined.
  • Carefully fold in the blackberries.
  • Spoon mixture into prepared pan, filling about 2/3 full.
  • Place pan into oven and bake about 20 minutes.
  • Remove from oven and allow to cool slightly before enjoying!
