Ingredients

  • 2 cups old fashioned oats
  • 1 cup milk
  • 1/2 cup maple syrup
  • 1/3 cup oil
  • 2/3 cup brown sugar
  • 2 eggs
  • 1 1/2 cups flour *all purpose
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  • Preheat oven to 400 degrees and line a muffin tray with liners/grease.
  • In a mixing bowl, combine the oats and milk.
  • Add in the maple syrup, oil, brown sugar, eggs, flour, baking powder, cinnamon, baking soda, and salt.
  • Stir until just combined.
  • Divide batter evenly into prepared muffin cups, filling about 3/4 full.
  • Place pan into preheated oven and bake 17-20 minutes.
  • Remove from oven and allow to cool slightly before serving!
