MUFFIN
- 1/2 cup canned pumpkin
- 1/2 cup milk
- 1 egg
- 2 cups Bisquick
- 1/4 cup sugar
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ginger
STREUSEL
- 1 tablespoon Bisquick
- 2 tablespoon sugar
- 1/2 teaspoon cinnamon
- 2 teaspoon cold butter
MUFFINS
In a medium bowl, combine the pumpkin, milk, egg, Bisquick, sugar, nutmeg, cinnamon, and ginger.
Stir until just combined, be sure not to overmix.
Fill each muffin cup about 3/4 full.
STREUSEL
In a small bowl, combine the Bisquick, sugar, cinnamon, and butter.
Using a fork, combine ingredients until crumbly mixture forms.
Evenly sprinkle streusel on top of muffin cups.
Place muffin tray in preheated oven and bake for about 13-15 minutes.
Remove from oven and enjoy!
