Lazy Day Cake

This Lazy Day Cake, aka Hot Milk Sponge Cake, can be made quickly and has an All American taste!

Ingredients

CAKE

  • 1 cup flour *all purpose
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 eggs
  • 1 cup sugar
  • 1/2 cup milk
  • 2 tablespoon butter

COCONUT TOPPING

  • 1/2 cup brown sugar
  • 3 tablespoon butter
  • 2 tablespoon milk
  • 1 cup flaked coconut

Instructions

CAKE

  • Grease an 8x8 baking pan and preheat oven to 350 degrees.
  • In a medium bowl, combine the flour, baking powder, and salt.
  • In a small bowl using an electric mixer, beat eggs on high speed for about 4 minutes, or until thick.
  • Gradually add in the sugar, beating with mixer until sugar has dissolved.
  • Add mixture to the flour mixture and stir until just combined.
  • Heat milk with butter until butter melts, stir into batter.
  • Pour batter into prepared pan and place pan in preheated oven to bake 20-25 minutes.

COCONUT TOPPING

  • While cake is baking, mix together the brown sugar and butter using a mixer until fluffy.
  • Stir in the milk and coconut.
  • Once cake has baked, remove from oven and put topping over warm cake.
  • Place cake into oven and broil for about 3-4 minutes, or until top is golden.
  • Serve!
