CAKE
- 1 cup flour *all purpose
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 eggs
- 1 cup sugar
- 1/2 cup milk
- 2 tablespoon butter
COCONUT TOPPING
- 1/2 cup brown sugar
- 3 tablespoon butter
- 2 tablespoon milk
- 1 cup flaked coconut
CAKE
Grease an 8x8 baking pan and preheat oven to 350 degrees.
In a medium bowl, combine the flour, baking powder, and salt.
In a small bowl using an electric mixer, beat eggs on high speed for about 4 minutes, or until thick.
Gradually add in the sugar, beating with mixer until sugar has dissolved.
Add mixture to the flour mixture and stir until just combined.
Heat milk with butter until butter melts, stir into batter.
Pour batter into prepared pan and place pan in preheated oven to bake 20-25 minutes.
COCONUT TOPPING
While cake is baking, mix together the brown sugar and butter using a mixer until fluffy.
Stir in the milk and coconut.
Once cake has baked, remove from oven and put topping over warm cake.
Place cake into oven and broil for about 3-4 minutes, or until top is golden.
Serve!
