- 2 cup quick oats
- 1/2 teaspoon cinnamon
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 bananas, mashed
- 1/2 cup peanut butter
- 2 tablespoon honey (local is best)
- 1 teaspoon vanilla extract
- 1/4 cup chocolate chips (optional)
Preheat oven to 350 degrees and line a baking sheet with parchment paper.
In a medium bowl, combine all the ingredients.
Using a 1/4 measuring cup, scoop and place onto the parchment paper.
Somewhat flatten the cookies with a fork as they don't spread in the oven and this will help them cook more evenly.
Place baking sheet in oven and bake for about 15 minutes.
Remove and allow to cool slightly before serving!
