Banana Breakfast Cookies
Incredibly tasty, chewy, and healthy.....these Banana Breakfast Cookies are a great way to start your day! Yes, cookies for breakfast!
- 2 cup quick oats
- 1/2 tsp cinnamon
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 bananas, mashed
- 1/2 cup peanut butter
- 2 tbsp honey (local is best)
- 1 tsp vanilla extract
- 1/4 cup chocolate chips (optional)
Preheat oven to 350 degrees and line a baking sheet with parchment paper.
In a medium bowl, combine all the ingredients.
Using a 1/4 measuring cup, scoop and place onto the parchment paper.
Somewhat flatten the cookies with a fork as they don't spread in the oven and this will help them cook more evenly.
Place baking sheet in oven and bake for about 15 minutes.
Remove and allow to cool slightly before serving!
