Ingredients

  • 2 cup quick oats
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 bananas, mashed
  • 1/2 cup peanut butter
  • 2 tablespoon honey (local is best)
  • 1 teaspoon vanilla extract
  • 1/4 cup chocolate chips (optional)

Instructions

  • Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  • In a medium bowl, combine all the ingredients.
  • Using a 1/4 measuring cup, scoop and place onto the parchment paper.
  • Somewhat flatten the cookies with a fork as they don't spread in the oven and this will help them cook more evenly.
  • Place baking sheet in oven and bake for about 15 minutes.
  • Remove and allow to cool slightly before serving!
