Chicken and Zucchini Casserole
This Chicken and Zucchini Casserole is a family friendly meal that is a great way to use up zucchini from the garden! Simple to make and packed with flavor, you'll definitely want to add this to your meal plan!
- 6 oz chicken flavored stuffing *1 box
- 1/2 cup butter, melted
- 4 zucchini, sliced
- 1 onion, diced
- 1 lb chicken breasts, boneless, cooked/chopped
- 1 can cream of chicken soup *10.75 oz
- 1/2 cup sour cream
Combine the melted butter and stuffing package together in a medum bowl.
Scoop 1/2 cup of stuffing mixture out of bowl and set aside. This will be the topping used later.
In same bowl as remaining stuffing mixture, add in the zucchini, onion, cooked chicken, cream of chicken soup, and sour cream.
Spread mixture into a greased 9x13 baking pan.
Sprinkle reserved 1/2 cup stuffing on top evenly.
Place pan in preheated oven, 350 degrees, and bake about 45 minutes.
Remove and serve!
