Chicken and Zucchini Casserole

This Chicken and Zucchini Casserole is a family friendly meal that is a great way to use up zucchini from the garden! Simple to make and packed with flavor, you'll definitely want to add this to your meal plan!

  • 6 oz chicken flavored stuffing *1 box
  • 1/2 cup butter, melted
  • 4 zucchini, sliced
  • 1 onion, diced
  • 1 lb chicken breasts, boneless, cooked/chopped
  • 1 can cream of chicken soup *10.75 oz
  • 1/2 cup sour cream


  • Combine the melted butter and stuffing package together in a medum bowl.
  • Scoop 1/2 cup of stuffing mixture out of bowl and set aside. This will be the topping used later.
  • In same bowl as remaining stuffing mixture, add in the zucchini, onion, cooked chicken, cream of chicken soup, and sour cream.
  • Spread mixture into a greased 9x13 baking pan.
  • Sprinkle reserved 1/2 cup stuffing on top evenly.
  • Place pan in preheated oven, 350 degrees, and bake about 45 minutes.
  • Remove and serve!
