Tracy's Hearts of Palm Salad
A tasty side salad recipe that is made with hearts of palm, tomatoes, and avocado tossed in a simple dressing! Perfectly compliments any meal!

- 1/4 cup canola oil
- 2 tablespoon cider vinegar
- 2 tablespoon cilantro, chopped (feel free to omit if not a fan)
- 1 tablespoon lime juice
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 14.5 oz diced tomatoes, drained(canned) *you can also use fresh tomatoes in place of canned
- 14.8 oz hearts of palm, drained/sliced (jarred)
- 1 avocado, chopped
- 2 tablespoon red onion, sliced
- 1 can fiesta corn, drained
In a small bowl, whisk together the oil, vineagar, cilantro, lime juice, salt, and pepper.
Add drained tomatoes (or fresh), hearts of palm, avocado, onion, and corn.
Stir gently to combine. Serve and enjoy!
