Tracy's Hearts of Palm Salad

A tasty side salad recipe that is made with hearts of palm, tomatoes, and avocado tossed in a simple dressing! Perfectly compliments any meal!

Ingredients

  • 1/4 cup canola oil
  • 2 tablespoon cider vinegar
  • 2 tablespoon cilantro, chopped (feel free to omit if not a fan)
  • 1 tablespoon lime juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 14.5 oz diced tomatoes, drained(canned) *you can also use fresh tomatoes in place of canned
  • 14.8 oz hearts of palm, drained/sliced (jarred)
  • 1 avocado, chopped
  • 2 tablespoon red onion, sliced
  • 1 can fiesta corn, drained

Instructions

  • In a small bowl, whisk together the oil, vineagar, cilantro, lime juice, salt, and pepper. 
  • Add drained tomatoes (or fresh), hearts of palm, avocado, onion, and corn.
  • Stir gently to combine. Serve and enjoy!
