The perfect side dish to any meal, these potatoes are packed with cheese, bacon, sour cream, and butter!!
Boil potatoes in a large pot/dutch oven for about 15-20 minutes, or until tender.
Drain water and place potatoes in a large bowl.
Add the sour cream, milk, butter, salt, and pepper.
Beat on medium speed with a mixer until fluffy.
Stir in 2 cups of cheese, bacon, and green onion.
Transfer mixture to a greased 3 quart baking dish.
Sprinkle remaining one cup of cheese and top.
Place in a preheated oven, 350, and bake for 30 minutes.
