Mexican Quinoa Salad

Ingredients

  • 1 1/2 cups Quinoa *rinsed
  • 3 teaspoon oil
  • 1 onion *chopped
  • 1 cup corn
  • 15 oz black beans *drained and rinsed
  • 2 cups cherry tomatoes *quartered
  • 2 teaspoon cumin
  • 1 teaspoon chili powder
  • 6 tablespoon lime juice *more if desired for taste
  • 1 cup Feta cheese *crumbled
  • 1/2 cup cilantro *chopped

Instructions

  • Bring 2 1/2 cups water to a boil.
  • Stir in Quinoa and 1/2 teaspoon salt.
  • Reduce heat to low, cover, and simmer for about 18 minutes, or until water is evaporated.
  • Remove from heat and allow to sit for 10 minutes.
  • Heat the oil in a large skillet and cook the onion until tender, about 6 minutes.
  • Add the corn in and cook an additional 2 minutes.
  • Add the beans and cook an additional 3 minutes.
  • Transfer mixture to a bowl.
  • Add in the Quinoa, tomatoes, cumin, chili powder, and lime juice.
  • Toss until well mixed.
  • Add in Feta cheese and cilantro. Serve!
