Cinnamon Sugar Breakfast Muffins

Ingredients

  • 2 cups flour
  • 1/2 cup sugar
  • 4 teaspoon baking powder
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 eggs
  • 2 tablespoon sugar
  • 1 teaspoon ground cinnamon

Instructions

  • Preheat oven to 375 degrees and line a muffin pan. *This recipe makes about 16 muffins
  • In a medium bowl, combine the flour, sugar, baking powder, cinnamon, and salt.
  • In a separate small bowl, combine the milk, oil, and eggs.
  • Pour wet mixture into dry mixture and stir until just combined.
  • Divide batter into prepared muffin pan.
  • In a small bowl, combine the 2 tablespoon sugar and 1 teaspoon cinnamon.
  • Sprinkle mixture evenly on top of each muffin cup.
  • Place pan into preheated oven and bake for about 13 minutes, or until toothpick comes out clean when inserted in center.
  • Remove from oven and allow pan to sit 2-3 minutes before removing muffins.
