Season the roast with salt and pepper and place it in the bottom of a slow cooker. In a small bowl, mix the onion soup mix, Au Jus gravy mix, and beef broth, then pour this mixture evenly over the roast. Cover the slow cooker with a lid and cook on low for 6-8 hours or on high for about 4 hours.

Shred the meat using two forks. Cut the buns in half lengthwise and place the shredded meat on the bottom slice. Add a piece of provolone cheese on top. Turn on the broiler and broil the sandwiches for 2-3 minutes, or until the cheese has melted.
