What is Texas Trash Dip?
This Southern staple actually gained it’s popularity through Tex-Mex cuisine! Also known as Mexican Bean Dip, this recipe is warm, ooey gooey, and packed with flavor! With refried beans as the base, this hearty Texas Bean Dip is one you must try! You can also customize it to your liking by adding in jalapenos, chopped green chiles, hot sauce, or even cooked ground beef.
Ingredients Needed to make this Texas Trash Dip recipe

- Refried Beans– any brand works, you will need 32 ounces, so look for the large can or make homemade refried beans and measure accordingly.
- Cream Cheese– full fat offers the most flavor, allow to soften so it combines easier with the other ingredients.
- Sour Cream– any brand works, you can also use plain Greek yogurt if desired.
- Taco Seasoning– you’ll need one packet taco seasoning mix, or use 3 tablespoon of homemade taco seasoning.
- Monterey Jack Cheese– shredded cheese, freshly shredded is best versus bagged as it melts better.
- Shredded Cheddar Cheese– you can also use any Mexican Cheese blend desired.
How to make Texas Trash Dip
- Preheat oven to 350 degrees.
- In a large bowl, use an electric handheld mixer to combine the refried beans, cream cheese, sour cream, and taco seasoning.
- Spread bean mixture evenly on bottom of 9 x 13 inch baking dish.
- Sprinkle both shredded Mexican cheeses on top of bean mixture and place pan in oven to bake for about 25-30 minutes.
- Remove from oven and serve warm bean dip with tortilla chips or crackers.
Variations
If you want to change this up to make it heartier or add a bit of spice, here are some great options:
- Add in 4 ounces diced green chilies.
- Mix in 1/2 cup diced jalapenos.
- Up to 1 lb cooked ground beef, brisket, or chorizo makes a great protein addition.
- Use your favorite cheeses to make this your own. Mexican Cheese, Pepper Jack, and Queso Fresca are great alternatives.
- Once cooked, you can serve with diced tomatoes, black olives, fresh cilantro, avocado, peppers, or additional cheeses.

Although I can eat this dip as is using just a spoon, it is so much tastier when enjoyed with something to add a crunch! Here are some great options:

Storing Mexican Bean Dip
- This is best enjoyed fresh from the oven, but if you have leftovers, allow to fully cool before placing in an airtight container and placing in the refrigerator up to 1 week.
- You can freeze this up to 3 months, just be sure to thaw before reheating.
- To reheat, you can microwave cream cheese dip in 30 second increments until heated through.
- If you want to make this in your slow cooker, use non stick cooking spray to coat the liner. Add the ingredients as directed and cook on low for about 3 hours, or high for about 1-2 hours. Stir and once heated through, move to keep warm setting.

Cheesy Texas Trash Dip
Ingredients

- 1 cup sour cream
- 3 tablespoon taco seasoning *or 1 packet
- 2 cups Monterey Jack cheese, shredded
- 1 cup cheddar cheese, shredded

Absolutely!! Cooked ground beef or chorizo make great add in’s to this dip!!

I made this dip last night for a bible study group, and it was all gone by the time I left! I made a couple modifications. I added roasted bell peppers, sautéed onion and garlic, Roma tomatoes, spring onions, and poblano pepper. I also swapped out cream cheese for cottage cheese. I meant to add the taco seasoning, but I totally forgot I had it. So, I did my own seasonings of cumin, garlic powder, salt, pepper, chili powder, and cayenne pepper. The cayenne pepper really enhanced the flavor! I also added a cup of mild chunky salsa. I think the liquid from the cottage cheese and salsa were the reason the amount doubled. I had enough for two 9 inch pie pans!

Absolutely! Go ahead and assemble in your crockpot as directed in recipe, only place setting on low for about 1-2 hours. From there, switch to keep warm! Should work great!
