Sun-dried Tomato Pesto Pasta

Since its Meatless Monday, here is another yummy, meatless, dish for you all to try. My family went crazy over it and ended up eating it all. No leftovers were around after this meal. My five year old son ate his plate and half of mine because he enjoyed it so much. 
Hope you are all having a wonderful Monday. 

Ingredients:

6 tbsp sun-dried tomato pesto (you can find this by the spaghetti sauces)
3/4 cup heavy cream (any other cream sauce works fine too)
1/4 tsp red pepper flakes (more if preferred)
6 oz Mascarpone cheese
1 box linguine pasta
Salt (add to water as boiling)
Parmesan cheese, shredded

Directions:

In a pot, boil water and add pasta. Cook until al dente. Meanwhile, in a different pot, over medium heat, add in pesto and heavy cream, stirring until combined. Add in red pepper flakes and cheese. Allow to heat until melted. Stir frequently. Move heat to low and simmer until pasta is done. Once pasta is cooked, drain. Add pesto sauce to pasta and toss to evenly coat. Serve warm. *You can sprinkle Parmesan on top of pasta for additional flavor!
