This is more of an idea then a recipe, but thought I would share it anyways. My hubby and I moved up here, to Washington, a few years ago. I had never made jam before, but a friend introduced me to it and instantly, my hubby and I started making it each year instead of buying it from the store. It tastes so yummy, more fresh, and its a fun gathering the fruits with the kids. I highly recommend it if you have fruit available near you! The recipe below is off of the Pectin box, so I cant take credit for it. Hope you all are able to go fruit picking and make some yummy jam!!
4 cups crushed strawberries
7 cups sugar
1 pouch Certo (or pectin)
Bring boiling water canner, half full with water, to a low simmer. Wash jars and screw bands in hot, soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain well before filling. Prepare ingredients above. Either using a potato masher or food processor, mash fruit. Do not puree. Measure exact amount of prepared fruit into saucepot. Measure exact amounts of sugar into separate bowl. Stir sugar into fruit in saucepot. Add 1/2 tsp butter to reduce foaming if desired. Bring mixture to a full rolling boil on high heat. Stir in pectin quickly and return to a full boil for exactly one minute, stirring constantly. Skim off any foam with a spoon. Ladle quickly into prepared jars filling to within 1/8 inch of tops. Wipe jar rims and threads. Cover with two piece lids. Screw bands tightly. Place jars on elevated rack in canner and lower rack into canner. Water must cover jars by 1-2 inches. Bring water to a gentle boil. Process jams for 10 minutes. Remove jars and place on towel, upright until cooled completely. After jars cool, check seals by pressing middle of lid with finger. Let stand at room temperature 24 hours. Enjoy!
