From my Strawberry Pretzel Salad, Strawberry Mini Cheesecakes, and this Strawberry Slab Pie, you can’t go wrong. Refreshing, light tasting, and perfect for parties, gatherings, and more!
What is a slab pie?
If you’ve never tried a slab pie, you may be wondering what it is. Well, slab pies are pies baked in a sheet pan rather than circular pie dish. Flatter and wider than a standard round pie, slab pies bake and cool faster, and since they’re square, they are easier to serve in equal portions. You can find recipes all over Pinterest and in magazines these days because they are quite convenient and the perfect dessert for summer cookouts.
Ingredient Notes for Strawberry Slab Pie with Cream Cheese
This easy to make pie feeds a crowd and is perfect for BBQ’s, parties, and summer outings! See printable recipe card at the bottom of this post for exact measurements and directions.
- Pie Crust– you will need two refrigerated pie crusts for this recipe. I use Pillsbury, any brand works.
- White Chocolate– you’ll want to use white baking chocolate as it melts easier.
- Heavy Whipping Cream– this adds to the creaminess of the cream cheese mixture.
- Cream Cheese– opt for full fat as it adds more richness to this strawberry slab pie recipe.
- Powdered Sugar– this adds to the sweetness of the cream cheese layer.
- Whipped Cream– you can make homemade or use cool whip for this, either one works great.
- Strawberry Jam– make sure this is at room temperature so it easily spreads across the crust.
- Fresh Strawberries– add the fresh strawberry slices just before serving. They add a fresh, juicy addition.
How to make this Easy Strawberry Cream Cheese Slab Pie
- Preheat oven to 450 degrees. Lay pie crusts onto a flat, lightly floured surface, overlapping slightly. Roll dough to a 17 x 12-inch rectangle. Place in a 15 x 10 x 1-inch pan.
- Prick the crust with a fork all over. Bake 10 minutes until golden brown.
- Coarsely chop 4 ounces of the white chocolate bar and immediately sprinkle all over the hot crust.
- Let the chocolate sit for 2-3 minutes and spread the melted chocolate all over the crust.
- Place in the fridge to set the chocolate. About 10 minutes or just until chocolate it set.
- In a microwave safe bowl, combine the remaining white chocolate and heavy cream. Microwave in 20-second increments until the chocolate is melted and smooth.
- In a large mixing bowl using an electric mixer, beat the cream cheese and powdered sugar until combined.
- Add the melted white chocolate heavy cream mixture to the cream cheese mixture and beat until combined.
- Next fold in the whipped topping until all combined.
- Spread the strawberry jam on top of the crust.
- Next gently spread the white chocolate cream cheese mixture all over the crust Refrigerate at least one hour.
- Top with sliced strawberries before serving. Slice and serve!
Storing Old Fashioned Strawberry Cream Cheese Slab Pie
- Leftovers can be stored in the refrigerator for up to 3 days. Place in an airtight storage container or cover the pan with plastic wrap and aluminum foil.
- This berry slab pie is best when enjoyed fresh as everything softens as it sits and the crust won’t be as crisp. Try to plan it to where you eat it fresh and only store leftovers if needed.
Tips and Tricks
- Feel free to use semi-sweet chocolate in place of the white chocolate to make this a Chocolate Strawberry Pie.
- If you prefer homemade pie crust, that works great too. Make two crusts and use in place of the refrigerated ones.
- If you want to change up the berries, that works perfectly. Feel free to use raspberries, blackberries, etc.
- Ensure the cream cheese and jam are at room temperature so they blend easily and spread onto the crust.

Strawberry Cream Cheese Slab Pie Recipe
Ingredients
- 14 oz refrigerated pie crust you'll need 2 pie crusts
- 12 oz white baking chocolate
- 3 tablespoon heavy whipping cream
- 8 oz cream cheese softened
- 1/4 cup powdered sugar
- 8 oz whipped topping
- 3/4 cup strawberry jam
- 1 1/2 cups fresh strawberries sliced
Instructions
- Preheat oven to 450 degrees.
- Prick the crust with a fork all over and place pan into over to bake for about 10 minutes, or until golden brown.
- Coarsely chop 4 ounces of the white chocolate bar and sprinkle over the warm crust.
- Let the chocolate sit for about 203 minutes and spread the melted chocolate evenly over the crust.
- Place pan into the refrigerator to set the chocolate, about 10 minutes.
- In a microwave safe bowl, combine the remaining white chocolate (8 ounces) with the heavy whipping cream. Microwave in 20 second increments until smooth and creamy.
- In a large mixing bowl, use an electric hand mixer to combine the cream cheese and powdered sugar.
- Add in the melted chocolate/whipping cream mixture and mix until combined.
- Fold in the whipped topping.
- Spread the strawberry jam evenly onto the white chocolate coated crust.
- Next, spread the white chocolate cream cheese mixture on top.
- Refrigerate for at least one hour. Place fresh strawberries on top just before serving. Slice and enjoy!
