Snickerdoodle Muffins

September 30, 2016 by Kristin 2 Comments

My oldest kiddo LOVES anything cinnamon related. Believe it or not, he doesn’t like a lot of sweets, chocolate, candy, etc. Yes, he is still my kid, he just didn’t get my sweet tooth I guess….lucky kid, haha!

Anyhow, anytime I want to make a special treat for my younger two kiddos, I can easily decide because they are the complete opposite. If it has sugar in it, chances are, they will love it. So, I always have a put my thinking cap on when it comes to treats for my oldest.

Last week, he did a great job on a test at school and I wanted to whip up something special for him. I decided on these snickerdoodle muffins because he loves muffins, loves cinnamon/sugar, and these are both of those combined. I had them ready for the oven in no time and the ingredients used were ones I already had on hand.

My house smelled fabulous and my kids literally came down the stairs to ask me what was smelling so good. One bite into these and they were all happy campers, but especially my oldest!

With Fall here, these are the perfect muffin to make for anytime of the day!

Snickerdoodle Muffins

Ingredients:

  • 6 tbsp. butter, softened
  • 1/2 cup sugar
  • 1 egg
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 1/2 cups flour
  • 1 1/2 tsp baking powder
  • 3/4 tsp cream of tartar
  • 1/4 tsp salt
  • 3/4 tsp ground cinnamon

Topping

  • 1/3 cup sugar
  • 1 tsp ground cinnamon
  • 2 tbsp. butter, melted

Directions:

  1. Preheat oven to 350 and spray a mini muffin pan with non stick cooking spray.
  2. In a mixing bowl, combine the butter and sugar with an electric mixer until combined.
  3. Add in egg, milk, and vanilla. Mix until combined.
  4. In a separate mixing bowl, add the flour, baking powder, cream of tartar, salt, and cinnamon.
  5. Pour the wet mixture into the dry mixture and stir until just combined.
  6. Fill each muffin tin about 3/4 full with batter.
  7. Place muffin pan in oven and bake for 10-12 minutes, or until cooked through.
  8. While muffins are baking, combine the sugar and cinnamon in a small bowl.
  9. Once muffins are baked, dip each muffin top into the melted butter and then into the cinnamon/sugar mixture.
  10. Place coated muffins on tray and serve immediately!!

*If making regular muffins, same directions apply, just bake for about 17-18 minutes.
