I came across this recipe on Pinterest and since I LOVE using my slow cooker, I had to try it. Not only was it easy, but it changed up my normal slow cooker meals, and turned out great! Definitely make this for the family!!
Ingredients:
4-5 bell peppers (I used red)
1/2 of a yellow onion, diced
1 pound ground beef or turkey (uncooked)
1 cup canned enchilada sauce
1 1/4 cup shredded jack cheese
3/4 cup cooked Mexican rice (I used leftovers from a previous night)
1/3 cup water
Salt/Pepper
Sour Cream
Directions:
Finely dice 1/2 of a yellow onion. Pour a cup of enchilada sauce into a heat proof microwavable container. Add onion to the cup and microwave for 5 minutes, to soften onion.
Cut the tops off of the bell peppers and remove seeds/stems.
Pour 1/3 cup water into bottom of the slow cooker.
In a large mixing bowl, add in ground beef or turkey, onion/sauce mixture, Mexican rice, 1 cup cheese, 1 tsp salt/pepper, and mix until thoroughly combined.
Spoon mixture into each bell pepper filling it to the top. Place filled peppers into slow cooker and cook on low for 6 hours. Serve topped with sour cream.
