Crustless Quiche
If you’re looking for a quick and easy meal option that is light on the calories, but packed with flavor, let me introduce you to the crustless quiche! So many great ways to make it your own, but by eliminating the crust, it cuts down on both carbs and calories! This crust-less quiche recipe stays in the fridge for several days making it great for meal prepping those busy weeks! What is a Quiche?
A classic quiche recipe is a savory tart or pie made with a flaky crust and a rich egg filling, often with meat, cheese, vegetables, or seafood mixed in. It can be served warm, cold, or even at room temperature, and is versatile enough to be customized in many ways. Since it can be customized in several different ways, I love to go crustless.

- Gluten Free– since you don’t use a crust in this recipe, as long as you check the rest of the ingredients you choose to add, this should be gluten-free.
- A great way to use up leftovers– if you have meats to use up from the Holidays, or veggies from a previous meal, use them in this simple recipe.
Crustless Ham and Cheese Quiche Recipe Ingredient Notes
The best part about a quiche is the fact you can customize it to fit your tastes and what you have on hand. Below is a basic overview of the ingredients I use in mine. See full recipe with measurements in recipe card below.
- Eggs– you’ll use 6 large eggs for this recipe.
- Heavy Cream– this gives the quiche it’s creamy texture. To make things a bit lighter, you can also use half and half or whole milk.
- Ham– this recipe is a great way to use up any leftover holiday ham. Or, you can pick up a ham steak or package or ham from the grocery store.
- Onion– one diced yellow or white onion.
- Broccoli– chopped vegetables are perfect in this recipe. We love broccoli in ours, however, feel free to use spinach, mushrooms, fresh/dry herbs (basil, thyme, chives,etc.), green onions, etc.
- Butter– my preference is to use unsalted butter, however, if salted butter is what you have on hand, that works too.
- Cheese– shredded sharp Cheddar cheese is my favorite, however, use your favorite shredded cheese. Parmesan cheese is a great option too.
- Salt/ Pepper– season to taste, I use more black pepper than I do salt, but start at about 1/2 teaspoon and adjust from there.
How to make this easy Crustless Quiche Recipe
- Preheat oven to 375 degrees.
- In a skillet over medium heat, melt the butter.
- Add in the onion and ham and cook for about 5 minutes.
- While that is cooking, place the broccoli in a microwave safe bowl with 2 tablespoon water and cook for about 2 minutes, so it can steam and become tender.
- In a small bowl, whisk together the eggs and heavy cream.
- Place the cooked ham, onion, and broccoli into a 9 inch greased pie dish.
- Sprinkle the cheese over the veggies.
- Pour the egg mixture over the top of the veggies and place pie pan into preheated oven.
- Add desired amount and salt/pepper to taste.
- Bake for about 35 minutes, or until quiche no longer shakes in center.
- Remove from oven and allow to cool slightly before you slice and serve!
Crustless Ham Quiche Variations
- Protein– you can use sausage, bacon, or pork.
- Cheese– Mozzarella, Pepper Jack, Swiss, or Gruyere cheese are great options.
- Cream– in place of the heavy cream, you can use milk or half and half.
- Veggies– spinach, kale, mushroom, tomatoes, fresh herbs, etc.
- Crust– if you prefer yours with a pie crust, feel free to use store bought or homemade and simply add the ingredients on top of it.
Storing Quiche without Crust
- To refrigerate, cover with plastic wrap once fully cooled. This should last in the refrigerator for up to 5 days. Reheat in the microwave or oven.
- If prepping the night before, don’t bake quiche, just cover with wrap and place into your refrigerator.
- Quiche freezes really well. Just place it in an airtight container and store in the freezer for up to two months. Allow to thaw before reheating.

Ham and Cheese Crustless Quiche Recipe

Great recipe. Was my first time making…I did leave out the broccoli (didn’t have any) and added dried cliantro, parsley and canned portabello mushrooms. I used medium cheddar cheese. Everything else was according to the recipe. Took to a VFW Meat Bingo night and it was super good. My husband used a bit of the leftovers in a breakfast burrito and he said it worked perfectly. Next time, I plan on making it Whole30 style by using Original Nutpods and leaving out the cheese. Thanks for this eggcellent recipe!

I would suggest either a pie crust or using crescent rolls spread onto the bottom of a pie pan! Bake for a few minutes prior to assembling! Either of those are great options! Enjoy!
