This dinner is super easy, quick, tasty, and always makes enough to have another meal out of it the next day!! I dont know about you, but when I can make one dish and get two meals out of it, sign me up!!!! 🙂
1 lb rotini or penne pasta
3/4 lb Italian sausage (I used mild)
2 red peppers, chopped
1 large onion, chopped
1 tbsp olive oil
1 jar marinara sauce (any flavor, 26oz)
2 cups shredded Italian four cheese blend
Heat oven to 450*. Cook pasta according to package directions, drain.
While pasta is cooking, cut sausage into 1/2 inch slices, or remove casing and shred. Slice/chop peppers and onion. Heat olive oil in skillet. Add in the sausage, onion, and pepper. Cook about 10 minutes stirring occasionally, until sausage is cooked through and onion/pepper is tender. Add sauce and bring to a simmer. Stir in the drained pasta and one cup of cheese.
Pour pasta mixture into a 9×11 baking pan. Sprinkle remaining 1 cup of cheese on top and bake for about 10 minutes, or until cheese is melted. Cool about 5 minutes before serving.
