    Easy Baked Reuben Sliders

    These easy Baked Reuben Sliders come together in no time and are packed with tastiness throughout! All the flavors of a classic Reuben packed into a slider sandwich that is perfect for game day, St. Patrick’s Day, or busy weeknight meals!

    One of my favorite things to make for a quick appetizer or meal option are sliders. Not only are there so many varieties to choose from, but they are perfectly sized to grab and go with one (or two). Since I love a good Reuben sandwich, I knew I had to make it into slider form for a tasty change. In fact, these mini Reuben sliders may just be my new favorite since they are much easier to enjoy as compared to a huge, layered sandwich! Paired with some crispy onion rings, fries, or chips and you have a meal ready in no time!

    What is in a Reuben Sandwich?

    Traditional Reuben sandwiches consists of thin sliced corned beef, Swiss cheese, and sauerkraut on grilled rye bread with Russian dressing or thousand island dressing. You can also use pastrami, however, classic uses corned beef.

    Ingredients needed for this Reuben Sliders Recipe

    • Hawaiian Sweet Rolls– I use King’s Hawaiian Rolls for this recipe as they add a hint of sweetness and are perfectly sized. Any slider buns works in this recipe though
    • Corned Beef– thinly sliced, deli style is best. I typically order this from the deli counter at my grocery store
    • Swiss Cheese– thinly sliced, this cheese is mild in flavor, you can also use Mozzarella or Provolone cheese if you don’t like Swiss
    • Thousand Island Dressing– this offers a sweetness, however, if you want a bit spicier of a kick, you can also use Russian dressing
    • Sauerkraut– squeezed dry, this offers a great addition of fiber to each slider. However, some people don’t like it and if that is the case, feel free to omit
    • Butter– I use unsalted, you will melt this for the butter topping
    • Minced Onion– adds so much flavor to the topping that gets brushed on
    • Sesame Seeds– optional, but highly recommended for an added crunch on top
    • Poppy Seeds– optional, but combined with the sesame seeds, it’s a great crunch addition to the butter topping
    • Salt– adds a boost to the sauce, feel free to omit if trying to control sodium levels

    How to make Reuben Sliders on Hawaiian Rolls

    1. Preheat the oven to 350°F and spray a 9×13-inch baking dish with non-stick cooking spray.
    2. Split your slider rolls in half. Place the bottom half of the rolls in the prepared baking dish.
    3. Top the buns with 6 slices of Swiss cheese, follow with deli corned beef thinly sliced, sauerkraut, dressing, more corned beef and then a second layer of 6 slices of Swiss cheese.
    4. Place the top halves of the buns on top.
    5. In a small bowl, stir together the buttered topping ingredients.
    6. Brush the top rolls with the melted butter mixture.
    7. Cover the dish with tinfoil and bake for 20 minutes, or until the cheese is hot and bubbly.
    8. Remove aluminum foil and bake an additional 5 minutes (or until the tops of the sliders turn a golden brown).
    9. Remove from oven and serve.

    What to serve with easy Reuben Sliders

    We love serving these Reuben sandwich sliders straight from the oven when the cheese is melted, the sandwiches are warmed through, and the flavors are at their best. These pair perfectly with just about anything desired, but here are some great options:

    • Crispy Parmesan Potatoes
    • Potato Chips
    • Onion Rings or Fries
    • Classic Potato Salad
    • Smoked Deviled Eggs
    • Pickles

    Reuben Sliders FAQ’s

    Do I have to use Hawaiian Rolls in this recipe?

    Nope, any type of slider roll, dinner rolls, or sandwich bun works great, however, I prefer the slight sweetness and size of the King’s Hawaiian rolls. Reuben sliders on pretzel rolls are a great option too.

    Do I have to use sauerkraut for these baked Reuben sandwiches?

    Sauerkraut is an acquired taste, so feel free to omit if you aren’t a fan. If you do choose to use it, be sure to squeeze as much liquid out of it as you can as this will keep your sliders from getting soggy.

    What type of dressing tastes best?

    Personally, I love Thousand Island for the sweetness it adds, however, Russian dressing is just as delicious. It just depends on preference. Do you want classic sweetness or do you want a bit of a spicier, less sweet addition?

    What else can I add to make these mini Reuben sandwiches more authentic?

    A great addition would be caraway seeds! These add all the classic Reuben flavors. Again though, they are a love or hate type of addition, so if you love them, add them to the butter topping. If you don’t, these will be just as delicious!

    What can I use if I can’t find corned beef?

    You can also use pastrami in this recipe. Classic is corned beef, however, pastrami is simply a different cut of the same meat, so you will be good using either.

    Storing these Corned Beef Sandwiches

    • Once fully cooled, you can store leftovers in an airtight container in your refrigerator for up to 4 days.
    • To freeze, place in a freezer safe container for up to 3 months.
    • Defrost overnight and reheat in the oven while wrapped in aluminum foil.

    Ingredients
      

    Sliders

    • 12 Hawaiian Rolls
    • 8 oz. corned beef sliced thin
    • 8 oz. Swiss cheese sliced thin
    • ⅓ cup Thousand Island dressing
    • 8 oz Sauerkraut squeezed to get liquid out

    Butter Topping

    • ¼ cup butter melted
    • ½ teaspoon minced onion dried
    • ½ teaspoon sesame seeds
    • ½ teaspoon poppy seeds
    • 1 teaspoon salt

    Instructions
     

    • Preheat oven to 350 degrees and spray a 9x13 baking pan with cooking spray.
    • Slice rolls in half and place the bottom halves in prepared baking dish.
    • Top the buns with half the slices of Swiss cheese, followed by half the corned beef, sauerkraut, dressing, and another layer of cheese and corned beef.
    • Place the top half of the rolls on top to create a sandwich.
    • In a small bowl, mix together the butter, onion, sesame seeds, poppy seeds, and salt.
    • Brush evenly on top of the sliders.
    • Cover the dish with foil and place in oven to bake about 20 minutes.
    • Remove foil and bake an additional 5 minutes, or until golden brown.
    • Remove from oven and serve!

      Your Reuben Sliders look delicious but I believe you forgot to add how much sauerkraut to the ingredient list.

          Loved these. I added a heaping tsp of sauerkraut-roughly and same for Thousand island. Had extra for dipping sauce. Will def make these again
