I don’t know about you, but I love soup! In fact, I am a “soup year round” type of person, but nothing beats a warm bowl on a cold evening. So many different varieties to make from classic Chicken Noodle Soup, to Creamy Chicken Pot Pie Soup, and even Chicken Tortilla Soup! I love combining my love of Mexican food with soup since you get the best of both worlds. This easy Chicken Fajita Soup is fun to load with all your favorite toppings to make it your own!
Ingredients for making the best Creamy Chicken Fajita Soup

- Chicken- boneless skinless chicken breasts cooked and shredded using two forks, or to save time, you can use Rotisserie chicken
- Onion- I typically use a white onion and dice it up, however, feel free to use whatever type you have on hand
- Green Pepper- remove seeds and dice it up, you can also use orange, yellow, or red bell peppers in this delicious soup
- Garlic- fresh, minced garlic
- Butter- I use unsalted to control the salt amounts a bit, this is used to sauté the vegetables and make them tender
- Cream Cheese- allow the cream cheese to soften so it is easier to combine into the soup
- Diced Tomatoes- Rotel is best for this soup as its a mixture of both diced tomatoes and green chiles. I use mild, but you can use any type
- Chicken Broth- look for low sodium chicken broth if possible
- Heavy Whipping Cream- you can also use half and half if you have that on hand, this adds the creaminess to the soup
- Fajita Seasoning- if you don’t have any on hand, taco seasoning works too
- Toppings- see options below, have fun with this as it adds lots of flavor and fun to your meal

The fun part about this soup recipe is the toppings. I love to serve ours with lots of options and each bowl ends up completely different. Here are some of our go to favorites:
- Crushed Tortilla Chips
- Sour Cream
- Sliced Avocado
- Jalapeno Slices
- Shredded Cheese (Mexican, Cheddar Cheese, Pepper Jack, etc.)
- Cilantro
- Diced Tomatoes
- Black Olives

- Black Beans/ Pinto Beans
- Tortilla Strips
- Fresh Lime Juice
- You can enhance the flavor even more using chili powder, onion powder, garlic powder, cumin, paprika, red pepper flakes, Oregano, etc.
How to make Creamy Fajita Soup
- In a large pot, melt the butter over medium-high heat.
- Add in the onion, garlic, and green pepper and allow to simmer for about 3 minutes.
- Add the cream cheese to the pot and mash around a bit to incorporate.
- Pour in the diced tomatoes (and juice from can), chicken broth, heavy cream, and fajita seasoning. Stir to combine.
- Lower heat and simmer for about 20 minutes.
- Add in the cooked, shredded chicken and stir.
- Serve with toppings of choice.

Super easy and super quick recipe. I followed the directions with what I had in the cabinet/fridge.
The changes I had to make: Left out the pepper (didn’t have one) added a small can of sweet corn (no juice) to make up for the lack of pepper and used taco seasoning instead of fajita.
It was AMAZING! Kids loved it! Husband loved it!

I was in the mood for beef, so I cut the recipe in half and added half a pound of ground beef once the onions and peppers cooked for a few minutes. I drained some of the oil before continuing and it turned out great!
