Cinnamon Doughnut Muffins

This past weekend, my husband said he was in the mood for a yummy muffin. He loves the cinnamon streusal muffins made from a boxed mix. I will admit, they are pretty good, but I however, was not in the mood for them. I decided to quickly scan Pinterest and find some ideas. I came across a version of these muffins, and changed it a bit. They turned out so yummy and were a huge hit with the family! If you are a muffin fan, be sure to try these!!

Ingredients:

1 3/4 cup all purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp ground nutmeg
1/2 tsp cinnamon
3/4 cup white sugar
1/3 cup canola oil
1 large egg
3/4 cup milk
Jam (I used our homemade kind)

Topping:

1/4 cup butter, melted
1/3 cup white sugar
1 tsp cinnamon

Directions:

Preheat oven to 350. In a large bowl, combine flour, baking powder, salt, nutmeg, and cinnamon. In smaller bowl, combine sugar, oil, egg, and milk. Mix wet ingredients into dry ingredients until thoroughly combined. In a lined or sprayed muffin pan, fill each muffin cup halfway full with batter. Take 1 tsp of jam and place directly in center of muffin. Fill each muffin cup up a bit more covering the jam. Bake in an oven for about 20 minutes, or until toothpick comes out clean.
While muffin is baking, melt butter in small bowl and sugar/cinnamon in another bowl. Once muffins are cooked and still warm from oven, dip top of muffin into butter and then into cinnamon/sugar to coat them.
Serve warm.
Yields about 9 standard size muffins!
