A few weeks ago, while the kids and I were visiting family in Houston, TX, my hubby called me to tell me about the amazing dinner he had made for himself. He made these fish tacos and said it was definitely something I needed to try. When we returned home from our trip, he whipped these up for us and WOW, they were amazing!! They were just as good the second night reheated, which is always a plus!
The fish was somewhat crispy and had tons of flavor, the cabbage on top added the perfect crunch, and the sauce that was drizzled on top added the WOW factor!! If you have never had fish tacos, or already LOVE them, this recipe is a must try!!!
For the Fish Batter:
- 1 cup flour
- 1 tsp ground mustard
- 1 tsp fresh Oregano, minced (dried works too)
- 3/4 tsp salt
- 1/2 tsp onion powder
- 1 cup beer
- 1 egg
- 1 pound Cod fillet, cut into 3×1 inch strips
For the Sauce:
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1 tbsp taco seasoning
- Juice of 1 lime
- Flour Tortillas
- 1 cup shredded cabbage (you can get the cole slaw mix from the store if desired)
- In a small bowl, combine the sauce ingredients. Mix well, set aside.
- Pour oil into a large skillet and heat until reaches about 360 degrees.
- In a medium bowl, combine the flour, ground mustard, Oregano, salt, and onion powder.
- Pour the beer into a mixing cup. Add in the egg and stir well. Wait until the bubbles subside from the beer mixture and pour into the flour mixture.
- Mix until combined, a few lumps are fine.
- Dip the cut up cod fillets into the batter.
- Place batter covered fish pieces into the hot oil and cook on each side for about 3 minutes, or until golden brown on each side.
- Remove from oil and place fish on a paper towel to absorb any excess oil.
- Once all fish is cooked, serve in a tortilla.
- Drizzle sauce on top of fish, followed by a few pieces of the shredded cabbage! Enjoy!!
