This yummy side dish is so tasty and refreshing. It has lots of flavor and is quite simple to make. Its perfect for a healthy addition to any meal!!
Minced Garlic/Garlic Powder
Mozzarella cheese, shredded
Parmesan Cheese, shredded or grated
Basil (fresh or dried)
This recipe is one that you can play around with. Tweak it to your liking!! Slice zucchini in half, and cut of the bottom. Brush the top of zucchini with olive oil. Sprinkle minced garlic or garlic powder on top. Place sliced tomatoes on top. Add salt/pepper to taste. Sprinkle mozzarella cheese and/or Parmesan cheese on top. Bake in a preheated oven (375) for about 20-30 minutes, or until soft. Sprinkle Basil on Zucchini on after, if using fresh. If using dried, sprinkle on before baking!
