Quick Strawberry Bread
If you love fresh strawberries during the Spring season, this quick bread is for you! It is perfectly moist, tender, and light, with bakery-quality flavor and texture! Using simple ingredients, you may already have everything you need on hand!
Pair it with a cup of morning coffee, tea, or with a cold glass of milk! Plus, it’s not overwhelmingly sweet and can be made into a large loaf, several mini loaves, or into fluffy, tender muffins!

Most breads get too moist when using fresh fruit due to the excess moisture, however, this bread is perfect each and every time.
Firm Strawberries are BEST- the firm, brightly red colored berries are best in this recipe because they hold up to the heat oven the oven. Avoid mushy ones and they make the bread a bit soggy and aren’t as vibrant in color.
Pat strawberries dry first- once diced, pat the berries dry with a paper towel to remove any excess liquid from being added into the quick bread.
Avoid using frozen strawberries- this leads to a wet, mushy, soggy bread that no one will enjoy. Fresh is best!

- Flour- all-purpose flour is best in this recipe
- Sugar- this adds the perfect amount of sweetness to the bread
- Baking Powder- make sure your baking powder is fresh so you get the best lift/rise in this quick bread
- Salt- this activates the baking powder and helps with the overall texture
- Vegetable Oil- this adds the moisture to the bread and also helps keep things soft instead of crumbly
- Milk- I use 2%, but feel free to use whole milk or even buttermilk
- Egg- this is the binding agent and holds everything together, room temperature
- Vanilla Extract- pure is best versus imitation
- Strawberries- pick the reddest ones you can find as these will be the most sweet, feel free to toss with about 1 tablespoon flour to avoid them sinking
How to make Strawberry Bread
- Combine- add all the ingredients to a medium mixing bowl and stir until just combined.
- Fold in the Strawberries- carefully fold in the diced strawberries.
- Pour- batter into prepared loaf pan, mini loaf pans, or lined muffin tray.
- Bake- place pan(s) into preheated oven, 350 degrees, and bake for about 60 minutes if a large loaf, 35 minutes if making mini loaves, or 25-30 minutes if making muffins.
Fresh Strawberry Recipe Notes and Tips
- Be sure to grease the loaf pan thoroughly to avoid any sticking.
- Don’t use an electric mixer, stir the batter by hand with a wooden spoon.
- Don’t over-mix the batter, stir until ingredients are just combined.
- Place a few additional diced strawberries on top of the bread just before placing into the oven. This adds to the finished appearance.
- Toss the strawberries into about 1 tablespoon flour prior to adding them into the batter to avoid them sinking.
- Avoid opening the oven door while the bread is baking as this can cause the bread to potentially sink in the middle.
- If the bread is turning too brown, but not fully cooked through, place a piece of aluminum foil on top.
How to store Strawberry Bread
- Room Temperature- place bread into an airtight container and store at room temperature up to 4 days.
- Refrigerator- store bread in an airtight container or bag in the refrigerator for up to 7 days.
- Freezer- allow bread to fully cool before placing in a freezer safe container. This bread is freezer safe for up to 3 months.

Can I freeze this strawberry bread?
Absolutely! Let the bread cool completely. Wrap the bread in plastic wrap followed by aluminum foil and place in the freezer. You can also place the bread in freezer safe bags. Freeze the bread up to 3 months. Thaw before serving!
Can I use frozen strawberries?
No, unfortunately I do not recommend frozen strawberries as they add too much moisture and will make this quick bread too soggy.
What other berries can I use in place of the strawberries?
Absolutely! You can use just about any berry variety you have on hand. Cranberries and raspberries are great in this! Check out my Blueberry Quick Bread for a fun variation!
What can I add into this bread for additional flavor?
Feel free to add a variety of berries into this bread, as well as some chopped nuts. Just use moderation when adding ingredients in as you don’t want to affect the rise of the bread.
Can I use melted butter in place of the oil?
I don’t recommend it as butter is heavier and will change the texture of the bread to be a bit denser. Oil keeps the texture light and less crumbly.
Variations
Feel free to change this recipe to fit your tastes and needs. Here are some great ways:
Muffins- spoon the batter into lined muffin cups and bake in preheated oven for about 25-30 minutes.
Mini Loaves versus Large Loaf- divide batter evenly between 4 prepared mini loaf pans versus one large pan. Bake for about 35-40 minutes.
Different Mix In’s- experiment with different berries and/or chopped nuts in this bread.
Add a Glaze- although this bread do not need a glaze, you can add one by combining 1 cup powdered sugar with about 3 tablespoon water or milk. You can also make a cream cheese glaze or melted chocolate on top for an added sweetness.

Fresh Strawberry Bread
Ingredients
- 2 1/2 cups flour
- 3/4 cup sugar
- 3 1/2 teaspoon baking powder
- 1 teaspoon salt
- 3 tablespoon vegetable oil
- 1 cup milk
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/2 cups strawberries, chopped
Instructions
- In a medium bowl, combine the flour, sugar, baking powder, salt, vegetable oil, milk, egg, and vanilla extract.
- Mix until just combined.
- Fold in the chopped strawberries.
- Grease 4 mini loaf pans, 1 regular loaf pan, or a muffin pan.
- Pour batter evenly into prepared pan.
- Place pan in preheated ove, 350 degrees, and bake for about 35 minutes if making mini loaves, 65 minutes if making large loaf, and about 25-30 minutes if making muffins.
- Remove pan from oven and allow to cool slightly before serving!

This recipe is so easy and DELICIOUS! I used frozen strawberries, thawed & drained well before adding them, but may also try the fresh once they’re in season. I like nuts in mine, so I added a cup of chopped walnuts. I bought Strawberry cream cheese for spreading on the bread slices. Yum!
