Lemon Zucchini Muffins

A flavorful muffin packed with zucchini and just the right amount of lemon to have you going back for more!

A few weeks ago, while grocery shopping, I noticed the zucchini on sale. Since my youngest kiddo LOVES zucchini, I try to always incorporate it into at least one dinner a week. Typically,  I make roasted zucchini as a side dish, but I decided to change things up and make muffins instead.

These freeze great, make the perfect breakfast or snack anytime of the day, and the best part about these is my kids eat them up without realizing they are eating zucchini, hehe! The lemon adds just the right amount of sweet/tang and these muffins are incredibly moist!

Lemon Zucchini Muffins

Ingredients
  • 1 3/4 cup flour
  • 1/2 cup sugar
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 2 cups shredded zucchini
  • 1/2 cup oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • 2 tsp lemon zest
  • 2 tbsp sugar
  • 1 tbsp lemon juice
Instructions
  1. Preheat oven to 350 degrees and line muffin tray with liners.

  2. Combine the flour, sugar, salt, baking soda, baking powder, and cinnamon in a medium bowl.

  3. Add in the zucchini, oil, eggs, vanilla, lemon juice, and zest.

  4. Stir until just combined.

  5. Scoop batter into lined muffin cups, about 3/4 full.

  6. Place muffin tray in preheated oven and bake for about 20 minutes.

  7. While muffins are baking, combine the sugar and lemon juice in small bowl. Microwave mixture for about 25 seconds.

  8. Once muffins are done, remove from oven and allow to cool.

  9. Drizzle glaze over tops of muffins and serve! Enjoy!
