Cinnamon Streusel Blueberry Cake

My hubby, being the awesome guy he is, makes us breakfast each weekend! The kids love helping him prepare things like donuts, cakes, pancakes, etc.

A few weekends ago, my oldest son asked to make something with blueberries, so he and my hubby whipped up this cake! It was packed with juicy blueberry, cinnamon swirls, and a moist cake! We all thoroughly enjoyed it the entire weekend and were sad when we ate the last piece up.

This cake would be a great dish to bring to a brunch, make when having company over, or to enjoy as an evening sweet treat!

Who knew cake would be great for breakfast, hehe!!


Cinnamon Streusel Blueberry Cake



  • 2 cups flour
  • 2 1/2 tsp baking powder
  • 1/4 cup butter, softened
  • 1 egg
  • 3/4 cup sugar
  • 3/4 tsp salt
  • 3/4 cup milk
  • 1 pint blueberries


  • 1/2 cup sugar
  • 1/3 cup flour
  • 1 tsp cinnamon
  • 1/4 cup butter, softened



  1. In a medium bowl, combine the flour, baking powder, softened butter, egg, sugar, salt, and milk.
  2. Blend with an electric mixer until all is combined.
  3. Carefully fold in the blueberries.
  4. Spread batter into a greased 8 x 8 baking pan.
  5. In a small bowl, combine the sugar, flour, cinnamon, and butter using two forks.
  6. Once crumbly mixture is formed, sprinkle evenly over cake batter.
  7. Place pan in preheated oven, 375, for about 40-45 minutes.
  8. Remove from oven and allow to cool for about 5 minutes prior to cutting and serving!
