Peanut Butter Cheesecake Cups

This past weekend, both my hubby and I were in the mood for a new, yummy dessert. Since I had some cream cheese in the fridge to use up, my hubby suggested cheesecake! We are huge fans of peanut butter, cheesecake, and chocolate… why not combine all three? He ended up making these all by himself since I was busy making brownies for a neighborhood get together last that day. He even topped them off with a chocolate ganache layer, making these the ultimate sweet treat! We definitely enjoyed these and can’t wait to make them again! These make about 12 cups and also freeze perfectly!! Enjoy!

  • 1 cup crushed Oreos
  • 2 tbsp. butter, melted
  • 1 tbsp. sugar
  • 16 oz. cream cheese, softened
  • 1/2 cup peanut butter
  • 2/3 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 12 oz. semi sweet chocolate, chopped
  • 1/2 cup heavy whipping cream

  1. Preheat oven to 325 and line a muffin pan with liners.
  2. In a small bowl, combine the crushed Oreos, melted butter, and sugar.
  3. Divide mixture evenly into the bottom of the muffin cups and bake in oven for 10 minutes. Set aside.
  4. In a large bowl, combine the cream cheese, peanut butter, powdered sugar, and vanilla until mixed well.
  5. Beat in eggs one at a time and only mix until combined, do not over mix.
  6. Spoon filling into muffin tins on top of Oreo mixture.
  7. Bake in oven for about 20 minutes.
  8. Remove from oven and allow to cool completely.
  9. In a small bowl, melt the semi sweet chocolate. Stir in the whipping cream. Spoon mixture on top of each cheesecake.
  10. Serve! Store in refrigerator when not enjoying.
