Unstuffed Peppers

A few weeks ago, my parents came over for dinner. Since I wanted to try something new, I began looking through my old cookbooks, Pinterest, magazines, and more. I came across a version of this recipe and knew I had to try it. I love stuffed peppers, but since I have three small kids, I tend to not make them too often since the kids don’t like them very much. Their main complaint is the whole pepper that their food comes in, haha. I decided to cut the peppers up into this dish and it ended up being a great success. All of us, kids included, loved this and said we would definitely eat it again. My hubby took leftovers for lunch the next day and said it was just as tasty reheated!! Enjoy!



  • 1 lb ground beef or turkey
  • 1 tbsp olive oil
  • 3 bell peppers, chopped
  • 1 onion, chopped
  • 5 garlic cloves, minced
  • 1 tbsp soy sauce
  • 1 1/2 tbsp Worcestershire sauce
  • 1 1/2 tbsp cumin
  • 1 tsp salt
  • 2 cups tomato sauce
  • dash of ground pepper
  • cooked rice or pasta



  1. In a large skillet, brown the beef or turkey until no longer pink. Drain fat. Put meat into bowl, set aside.
  2. Heat olive oil in skillet and add in the bell peppers, onion, and garlic.
  3. Cook until tender, about 8-10 minutes.
  4. Return meat to pan with peppers.
  5. Add in the soy sauce, Worcestershire sauce, cumin, salt, tomato sauce, and pepper.
  6. Stir well and allow to simmer for about 15 minutes.
  7. Serve over rice or pasta!
