Lemon Pepper Salmon

Living up here in Seattle, WA, my family is really into salmon. The kids surprised us when we first gave them some and ended up loving it. Since then, we love to try new versions of it. Last week, as I was going through my refrigerator, I noticed I had some tomatoes and cilantro that I needed to use up before they went bad. I decided to take out some salmon fillets and make this new dish! Not only was it incredibly flavorful, but it was simple to make, the kids loved it, and was healthy!! We will definitely be making this again soon!!


1 tbsp butter
2 tbsp olive oil (or coconut oil)
4 (4 oz) salmon steaks
3 tsp minced garlic
2-3 tbsp lemon pepper seasoning
1 tsp salt
1/4 cup water
1 cup chopped tomatoes (fresh)
1 cup chopped cilantro (fresh)


Heat the butter and olive oil in a skillet over medium high heat. Place salmon in and season with garlic, lemon pepper, and salt. Pour 1/4 cup water around the salmon and add in the tomatoes and cilantro. Cover skillet and allow to cook for about 15 minutes, or until fish is cooked through and flaky. Serve! *I served ours over couscous and poured the extra sauce from the pan on top
