Oreo Cream Cheese Brownies

Every Friday, I try to make a new dessert for my hubby and I. Since we have three small kids (6 year old, 5 year old, and 3 year old), we do “in date nights”. Every Friday, after we put the kids to bed, we get take out or make a yummy dinner for just the two of us. We rent a movie and eat yummy dessert. It is a time for just the hubby and I to relax and spend time together. Saturday is family day, so spending Friday evening together is a great time for just us!! Yesterday, I decided to play around with some ingredients and came up with this yummy brownie!! I ended up making a 9×13 pan, so I had tons. I ended up having several friends stop by to grab the extras, so everyone was able to enjoy these!!!


1 box brownie mix (enough to make a 9×13)
1 package Oreos
8 oz Cool Whip
1 package, 8 oz, cream cheese, softened
1 1/2 cups powdered sugar
1 1/2 cups chocolate chips
1 tbsp coconut oil (you can also use vegetable oil)


Bake brownies according to directions. Once baked, remove from oven and allow to cool. Meanwhile, in a large bowl, combine the cream cheese and powdered sugar. Beat until smooth and creamy. Take one row of oreos from the package and chop them coarsely. Fold the oreos into the cream cheese mixture. Add in the cool whip and mix until all is combined. Spread mixture on top of brownies.
In a small bowl, combine the chocolate chips and coconut oil (or vegetable oil) and microwave in increments of 30 seconds until melted. Pour chocolate on top of cream cheese mixture and spread until coated. Coarsely chop one more row of oreos and crumble on top of the melted chocolate.
Place pan in the refrigerator for at least 30 minutes prior to cutting and serving. Store in the refrigerator when not enjoying : )
