Chicken and Broccoli Alfredo

Last week, I made this dish for dinner and it was a hit with the whole family. I thought for sure, my kids would pick out all the broccoli and refuse to eat it. Nope, I was wrong, they happily ate it up and my oldest, even asked for seconds. Since the sauce is made using Greek yogurt, it is a bit healthier then a normal Alfredo sauce. All the same flavor, only with less calories! 


2 boneless chicken breasts, cooked and cut into small pieces (I seasoned mine with salt/pepper)
2 cups cooked broccoli
10 oz cooked rotini
2 tbsp olive oil
4 tsp minced garlic
2 tbsp flour
1 cup chicken broth
1/4 cup milk
1/3 cup Greek yogurt
3/4 cup Parmesan cheese


Cook pasta according to directions. Drain and set aside. Heat oil in a large skillet. Add in the garlic and allow to cook over medium heat 1-2 minutes. Sprinkle flour and continue stirring. Slowly whisk in the chicken broth and milk. Add in the yogurt, salt, and pepper. Continue to whisk until combined. Remove from heat and stir in cheese. Pour mixture over pasta and toss to combine. Add in chicken and broccoli. Serve warm!!
