Blueberry Baked Pancakes

For the past few days, my kids had been begging for pancakes. I decided to make them on Saturday morning, instead of trying a new recipe of muffins. I wanted to try these baked pancakes because they looked easier to eat, prepare, and clean up. I was hoping to have leftovers after making these, however, they were such a hit in my house, my family ate the entire tray!!! All 5 people in the family had seconds, and 2 of my kids had a third helping!! Needless to say, I will definitely be making these again. These would be perfect to bring to a gathering, when company comes over, etc. If you double the recipe, put it into two 9×13 pans and freeze one!!

1 1/2 cups milk
1/4 cup butter, melted
2 eggs
2 tbsp sugar
2 cups flour
3 tsp baking powder
1/2 tsp salt
1 cup blueberries (I used frozen)
Grease a 9×13 baking pan and preheat oven to 350. In a large bowl, combine the milk, butter, and eggs. Once combined, add in the sugar, flour, baking powder, and salt. Fold in blueberries. Pour mixture into the prepared pan. Place in the oven and bake for about 25 minutes. Once slightly golden brown and toothpick comes out clean when inserted in middle, remove from oven and allow to cool for about 5 minutes. Slice into desired size and top with butter and syrup!!

    I absolutely love this recipe and can’t wait to try it! I have to admit, I love pancakes and so does my family, but I’m an epic failure at making them! I’ve just never gotten it down! Well, how cool is it I can just bake them!?! And I was also thinking, you could probably use any fruit or other additions you’d like to the batter! My family loves chocolate pancakes. I could probably add some cocoa powder to the batter and chocolate chips! Thank you for the recipe! 🙂
