A few weeks ago, I sent my hubby to Costco to pick up a few things. On the list I gave him, I asked him to pick up some fruit and vegetables. When he came home, I noticed he had picked up two bags of baby carrots. If you have ever seen the Costco bags of carrots, you know, having TWO bags was a TON of carrots. Needless to say, I started throwing carrots into everything! Luckily, I make the kids smoothies every afternoon, so I was able to toss a handful in there, however, I knew I needed to include them in dinners, to use them up. I made this recipe and it was a hit! The kids ate it up and the flavor was great!! I will definitely be making these again!!
2 lbs baby carrots
1/4 cup olive oil
1/2 tsp salt
1/4 cup balsamic vinegar
Preheat the oven to 400. In a baking pan, toss carrots with the olive oil. Sprinkle the salt on top. Roast in the oven for about 20 minutes, or until tender. Drizzle the balsamic vinegar on top of carrots and shake pan to evenly coat. Roast for another 5-10 minutes, or until carrots are tender and glazed. Enjoy!!
