Banana Streusel Muffins

Over the weekend, I was not feeling too well. I was in the mood for breakfast, but had no energy to make something. My hubby volunteered to make muffins for the family. What a great guy, right? We had a few bananas that were ready to be used up and instead of throwing them in the freezer, my hubby decided to make banana muffins. They turned out amazing and SO full of flavor. The streusel on top added a yummy cinnamon crunch and the muffin itself was moist and full of delicious banana flavor!!


1/2 cup flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3 bananas, mashed
3/4 cup white sugar
1 egg
1/3 cup butter, melted
1/3 cup brown sugar
1/4 cup flour
1/4 tsp ground cinnamon
1 tbsp butter
Preheat oven to 375. Line or grease a muffin tray. In a large bowl, combine the flour, baking powder, baking soda, and salt. In a separate bowl, combine the banana, sugar, egg, and melted butter. Stir the wet mixture into the dry mixture mixing until just combined. Spoon batter into muffin cups. You should be able to get about 12 muffins. In a small bowl, combine the brown sugar, flour, cinnamon, and butter. Cut into the butter until resembles cornmeal. Sprinkle on top of muffins. Bake in the oven about 19-20 minutes, or until toothpick comes out clean once inserted in middle. Remove from oven and allow to cool. Enjoy!
