Eggnog Muffins

About a week ago, I was looking through my fridge and noticed a full container of eggnog. I was trying to figure out a way to use it up, so I decided to try these out. These were a huge hit with the family, and had a yummy spice taste to them! The eggnog flavor was not too strong, so if you have “non eggnog fans” in your house, they may just love these muffins anyways!! Enjoy!

Ingredients:

2 1/4 cups flour
3/4 cup sugar
2 tsp baking powder
3/4 tsp nutmeg
2 eggs, lightly beaten
1 cup eggnog
1/2 cup butter, melted
1 1/2 tsp vanilla extract

Streusel:

1/3 cup flour
1/3 cup sugar
1/2 tsp nutmeg
2 tbsp butter

Directions:

Preheat oven to 375. Grease or line a muffin pan. Combine the flour, sugar, baking powder, and nutmeg in a bowl. In a separate bowl, combine the eggs, eggnog, melted butter, and vanilla. Add the liquid mixture to the dry mixture and stir until just combined. Spoon batter into muffin tins about 2/3 of the way full.
Combine the flour, sugar, nutmeg, and butter in a small bowl. Sprinkle mixture on top of each muffin cup. Place pan into oven and bake 18-21 minutes, or until golden.
