Breakfast Quesadillas

Since my family and I love quesadillas, I decided to make this version for breakfast a few weeks ago. It had great flavor and kept us all full until lunch. This would be the perfect breakfast, lunch, snack, etc. It was quick to throw together, you can change it up to what you have on hand, and it is very kid friendly!!


2 flour tortillas
Olive Oil
1/4 cup semi sweet chocolate chips
1 banana, sliced
1/2 cup strawberries, sliced
1/4 cup peanut butter, I used creamy, crunchy works too
2 tsp sugar
2 tsp ground cinnamon


Preheat oven to 350. Brush olive oil on one side of the tortilla. Place olive oil side down on a cutting board. Spread the peanut butter on top of tortilla. Sprinkle chocolate chips, banana slices, and strawberries on top of peanut butter. Place another tortilla on top. In a small bowl, combine the sugar and cinnamon. Brush more olive oil on top of tortilla. Sprinkle cinnamon/sugar mixture on top. Place filled tortilla on a lined cookie sheet. Bake in the oven about 7 minutes. Flip to the other side and sprinkle remaining cinnamon/sugar mixture on other side. Return back to oven for about 5-6 minutes. Remove and slice into halves or quarters. Serve!
