Avocado and Salsa Chicken Tacos

A few days ago, I looked at my schedule and realized I that I had so many things going on during the day, I would have no time to make dinner. I decided to throw a slow cooker dinner together since it would cook itself while I was gone, and be done just in time for my return. The end result was delicious and the entire family loved it! We got to have leftovers the following night, so it was a win win!! 

  • 1 lb boneless, skinless chicken breast
  • 1 1/2 cups salsa
  • 2 tsp onion powder
  • 1 tbsp taco seasoning (store package or homemade)
  • 1 splash of Hot Sauce
  • 2 avocados, chopped
  • 1/2 red onion, diced
  • 1/4 cup cilantro
  • 2 tbsp lime juice
  • Tortillas
  • Shredded Cheese, Sour Cream


  1. Place chicken on bottom of the slow cooker.
  2. In a small bowl, combine the salsa, onion powder, taco seasoning, and hot sauce.
  3. Pour mixture on top of chicken.
  4. Place lid on slow cooker and allow to cook about 5-6 hours on low, 3 hours on high.
  5. Once cooked, shred chicken using two forks.
  6. In a different small bowl, mix together the avocado, red onion, and lime juice.
  7. Place shredded chicken on tortillas and top with the avocado mixture. If desired, sprinkle some cheddar cheese and sour cream on top as well.
