My hubby and I love to trying new panini recipes because they are simple to make, involve literally no time in the kitchen, and are SO tasty!! A few weeks ago, we threw this version together using the random ingredients we had in our kitchen. It was one of my favorite ones to try so far!! I must admit, my panini press is definitely one of my favorite kitchen appliances!!
1/2 lb sliced roast beef
Provolone cheese, sliced
Foccaccia rolls or loaf
1 tbsp butter, melted
1 onion, sliced into thin strips
In a skillet, melt 1 tbsp butter. Add in the onions and cook until tender/caramelized. Set aside. If using loaf, cut into sandwiches, otherwise separate halves of rolls. Add a few slices of roast beef, one slice of provolone cheese, and the caramelized onion. On the other side of the roll/sandwich, spread some Dijon mustard. Place halves together to create a sandwich. Place on a preheated panini press or pan over medium heat. If using panini press, allow to cook for about 5 minutes, or until cheese is melted. If using pan, cook each side for about 5 minutes, or until slightly toasted and cheese is melted. Serve!!
